How to make a seven up Bundt pound cake
By nina64
Ingredients:
3 sticks of butter
3 cups of sugar
3 cups of cake flour, sifted
1 tsp of vanilla flavoring
3/4 cup of 7 up
5 eggs
1 tsp of lemon extract
Preheat oven to 325 degrees. Grease & flour a 9 inch bundt pan generously to prevent sticking.
Combine your butter & sugar until creamy. Add eggs, 1 at a time. Then add flour ( a little bit a time) until thouroughly combined together. Add the vanilla flavoring, lemon extract as well as the 3/4 cup of 7-up. The mixture will be somewhat kind of frothy, which is normal.
Pour the mixture into your greased & floured bundt pan. Put into 325 degree oven for 1 hour and 15 minutes until golden brown. Insert a toothpick to check for doneness. If the toothpick comes out clean, the cake is done. Let the cake cool in the pan completely. Then invert the cake onto a lined plate or cake serving platter. You can serve this cake as is or top if off with some whipped cream. You can also make a simple glaze by combining confectioners sugar with lemon juice or milk.
This cake makes a tasty ending to any meal. It can be also enjoyed with a cup of coffee for a early morning breakfast treat. Enjoy.

Say, go over and look at my Sour Cream Pound Cake,on my hubs, almost identical. As a matter of fact, my friend who is not deceased always made the 7up pound cake. Voted up, useful.
This recipe sounds really good to me. I like that kind of cake served with a simple glaze. Delicious! I'll have to pick up some Cake flour since I only have the All Purpose kind. There are other recipes I want to try that call for the cake flour too. It's time to get some!
Hi PegCole17, you can use regular all purpose flour for this recipe. The cake flour is a lot more softer and finer.
i just love cream cake.. :)

I don't know if anyone else has a different variation of this recipe. If so, I would love to hear about it.
